As I'm sure you know, these are both very different vehicles, but the good news is that each one is very capable in its own right. Both offer petrol and diesel engines, as well as manual and automatic gearboxes, so you should be able to find a variant that suits you.
The Kia Carens Clavis is the more sensible option, with more fuel-efficient engines, a more spacious cabin - even if you only use 5 of the 7 seats - and better features. However, it's not very exciting.
The Mahindra Thar Roxx, on the other hand, is the more emotional choice, with more power and performance, and great road presence. However, its ride is not comfortable, and because of its high floor height, entering and exiting is not easy for elderly people.
Your usage is not extremely high, so you could choose the Thar if you are prepared to live with its shortcomings.

To talk about differences, where the XEV 9e sports an SUV-coupe shape, the XEV 9S will have a more conventional SUV look. In fact, the basic stance will be very similar to the petrol//diesel Mahindra XUV700. The other big difference from the 9e will be the inclusion of a third row of seats.

From the cars you have shortlisted, none are likely to return 14kpl in the city from their turbo-petrol variants, unless there is very light traffic in your city.
Hence, if mileage is a priority, go for their diesel versions. This rules out the petrol-only Skoda Kylaq.
The new-gen Hyundai Venue is a big step up over the previous one, and you should definitely consider it. What's more is that Hyundai's 1.5-litre diesel engine is more efficient than the Mahindra XUV3XO.
Coming to the second part of your question, it all boils down to personal preference. Whether you want the space and a larger car, or you want all the modern features, and you don't mind compromising on cabin room. Ideally, drive all the cars that fit into your budget, and pick the one that you like the best.
